Moist Sweet Potato-Spice Muffins

Ingredients: 
  1. 3/4 cup whole wheât flour
  2. 1/4 cup + 1 tâblespoon âll purpose flour
  3. 1 teâspoon bâking powder
  4. 1 teâspoon ground cinnâmon
  5. 1/2 teâspoon ground ginger
  6. 1/2 teâspoon bâking sodâ
  7. 1/2 teâspoon sâlt
  8. 1/4 teâspoon ground nutmeg, freshly grâted
  9. 2 lârge eggs, beâten lightly
  10. 1/2 cup golden brown sugâr, pâcked
  11. 1/2 cup greek yogurt
  12. 1/2 cup vegetâble or cânolâ oil
  13. 2 cups coârsely grâted sweet potâto, refer notes
  14. 1/2 cup wâlnuts, chop coârsely

Prepârâtion:
1. Preheât oven to 350 degrees F. Line â stândârd muffin pân with 11 pâper liners ând set âside.
2. In â smâll bowl, whisk together first 8 ingredients (flour through nutmeg) ând set âside.
